Ingredients: -1 Quinoa rice pouch -3 cups mixed mushrooms sliced of your choice -1 tbsp. olive oil -4 garlic cloves minced -1 brown onion finely sliced -½ bunch of chives finely chopped -1 lemon juice and zest -2 teaspoons fresh thyme - ⅓ cup white wine vinegar -1 tbsp. soy sauce or tamari (to keep gluten free) -¾ cup grated Parmesan
Instruction: 1. In a medium skillet, cook mushrooms with olive oil until cooked. Remove from the heat and set aside 2. Ina large pot on medium-hugh heat, heat the quinoa rice. Once heated add garlic and sliced onion to the quinoa. 3. Add the rest of the ingredients. Stir well for a few minutes , and then remove from the heat. Serve in plate, add extra chives and parmesan, and enjoy.
